TOTAL TIME: 1.30 hour SERVES: 4 people
INGREDIENTS
For the broccoli:
500g of broccoli (frozen or fresh)
50g of butter
25g of blanched almonds (sliced)
1 clove of garlic
1 ½ teaspoon of breadcrumbs
salt
pepper
For the satay sticks:
½ cup of light coconut milk
½ up of peanut butter
8 wooden skewers
1 teaspoon of soy sauce
zest of one lime
1 garlic clove
1tbsp of mild curry powder
500g of boneless chicken breast
METHOD
The first step is the marinade for the chicken. In a large bowl crush a clove of garlic and grate the zest of a lime. Then add the soy sauce, the curry powder the peanut butter and the coconut milk. Stir all ingredients well.
Take the chicken breasts and cut them into small pieces. Take all the chicken pieces and place them into the bowl with a marinade and stir well. Take the chicken pieces and pierce them with the skewers. Ideally the chicken skewers should marinate in the fridge for over 1h. Save the remaining marinade for the cooking process.
After 1h of marinading the chicken skewers, start preparing the broccoli side dish. Therefore cook the broccoli in salted boiling water for about 5 minutes (do not overcook). Drain and rest on a plate. Heat the butter in a frying pan, add a crushed clove of garlic and the blanched almonds and cook low heat for about 5 minutes. Subsequently add the breadcrumbs and stir fry until golden. As a final touch add the broccoli to the breadcrumb mixture and stir fry for two minutes. Remove from heat and keep warm.
Time to take the marinated chicken out of the fridge and place the skewers on a hot grill or on a non sticky frying pan. Grill the chicken sticks both sides until golden (this will take about five minutes) making sure you poor a couple of spoons of the marinade over the sticks during this cooking time.
Remove the chicken from the heat and plate the sticks placing the broccoli on the side. As a final touch sprinkle some extra almonds on top of both.
