What to do with day-old bread...


If you have stale bread at home this recipe is great!  just a few steps and a couple more ingredients and a tasty meal is prepared.

Total time: 20 minutes  Serves: 4

Ingredients
400g of day-old bread
100ml milk
250ml canned cherry tomatoes
2 eggs
50g grated parmesan
2 cloves of garlic
chopped parsley
 a couple of basil leaves
olive oil, salt and pepper
crumbled feta cheese (optional)

Method
Break the bread into pieces, and place it in a bowl. Soak the pieces of bread in milk (they should absorb it completely).  Squeeze the bread from excessive milk and place it back into the bowl. Add two eggs and the grated cheese as well as a pinch of salt and pepper and  some chopped parsley. Mix all the ingredients well with a fork. 
Once done, start shaping the bread balls by hand one at a time using all of the mixture.
 Heat some olive oil in a frying pan and cook the garlic in until fragrant, then remove the garlic in order to fry the bread balls on both sides (make sure that that they do not burn and turn them a couple of times). When the balls are fried (3 to 5 minutes),  poor in the canned cherry tomatoes and the fresh basil leaves. Add an extra pinch of salt to the tomato sauce and cover the pan. Let it simmer for 10 minutes allowing the bread balls to soak in the sauce.
They are good served hot and are also spectacular served cold, the next day. As an extra touch, drizzle some feta cheese on top.
